North Pacific Chowder (6/5/09)

In a large fry pan cook 8 bacon strips until crisp. Drain reserving 1 teaspoon drippings. Crumble bacon and set aside.  Sauté 1 small onion, chopped, 1 celery rib, chopped. Add 32 oz chicken broth and 4 medium potatoes, cubed and cook until potatoes are tender.  Combine 2 Tablespoon flour and 1 pint half & half or milk until smooth. Gradually stir into soup. Bring to a simmer and cook and stir for 2 minutes. Stir in 1 pound halibut fillets, cubed, 1 Tablespoons minced fresh tarragon or 1 teaspoon dried tarragon, 1/2 teaspoon salt, 1/4 teaspoon pepper. Reduce heat, simmer uncovered for 5-10 minutes or till fish flakes easily with a fork.

 

 

 

 

 

 

Skunk Smell Remover

1 quart 

3% Hydrogen Peroxide

1/4 cup

Baking Soda

2 tbsp

Dish Detergent. The stuff for washing dishes in the sink, not something for dishwashers.

Mix the ingredients in a large bowl, because it will boil up like Vesuvius. We are, after all, making an oxygen generator. Wash the dog with this while it is still foaming, because it is the oxygen which reacts with the thiols in the skunk stink to neutralize the odor. If it sits around, it will loose it's efficacy because the oxygen boils off. Don't try to store it in an airtight container, because it will blow up. The brew also works for clothes, humans and unlucky cats.

Cinnamon Apple Slices (6/4/09)

Peel and core 4 medium apples and slice into 4 rings each. Cut 8 double thick 8 inch squares of heavy foil. Pour 1/2 teaspoon water into the center cavity. Sprinkle slices with 2 teaspoon sugar and dash each of cloves and cinnamon. Dot with 1 teaspoon butter or margarine. Sprinkle 1 teaspoon seedless raisins or chopped nuts. Seal packages and place folded side up on hibachi or grill about 4 inches above medium heat. Cook until apples are tender 30-40 minutes. Serve hot.

 

Pineapple Glazed Carrots (6/3/09)

Place 16 ounce package fresh baby carrots and 2 Tablespoons water in a microwave safe bowl. Cover and microwave on high for 4-6 minutes or till crisp tender. In another microwave safe bowl combine 1/4 cup pineapple preserves, 2 Tablespoons sugar, 2 Tablespoons butter 1/4 teaspoon salt and cook on high for 1-2 minutes or till preserves are melted. Pour over carrots, toss to coat and sprinkle with parsley.

 

Rhubarb Bars (6/2/09)

In a pot Simmer until thick: 3 cups chopped rhubarb, 2 teaspoons orange zest, juice of 1 large orange, 1/4 cup water and 1 cup granulated sugar.  In a bowl combine: 1 cup brown sugar. 1-1/2 cup flour, 1-1/2 cup oatmeal, (not instant), dash salt, 1 teaspoon cinnamon.  With fingers work in 1 cup butter until crumbly. Mix in 1/2 cup walnuts, chopped, optional. Pat one half of this dough into lightly greased 9 by 13. Pour rhubarb over this crust and top with remaining oatmeal mixture. Bake at 350 degrees for 30-35 minutes until nicely browned

 

 

Smoked Salmon Spread (6/1/09)

Remove any skin from 4 oz smoked salmon, cut up. With electric mixer or by hand mix together 4 oz light cream cheese at room temperature, the salmon, 2-3 horseradish, optional, 1 Tablespoon chopped green onion, 1 teaspoon lemon juice dash of salt . Can be refrigerated over night. Serve with crackers, or cracker cups.

 

Southwestern Fried Perch (5/29/09)

Place 1 envelope taco seasoning in a large resealable bag. Add one perch fillets and shake to coat.  In a shallow bowl, lightly beat 1 egg. Dip fillets in egg and coat with combination 1/2 cup yellow cornmeal and 1/4 cup all purpose flour refrigerate for 15 minutes. In a large skillet heat 3 Tablespoons canola oil over medium high heat. Fry fillets for 2-3 minutes on each side or until fish flakes early with a fork.
