Easy Pasty Pie (7/2/08)

Combine 1 pound raw lean ground chuck, 1 cup skim milk, 1 cup carrots, diced, 1 cup rutabaga, diced, 1 package dry onion soup mix, 2 cups raw hash browns. Mix and empty mixture into deep dish pie plate. Arrange 1 pie crust on top and make slits in top. Bake 1 hour at 375 degrees and cover if crust starts to brown.

 

Slow Cooker Tex Mex Chicken (7/1/08)

Mix in a slow cooker, 1 pound boneless skinless chicken breast cu into strips with 2 Tablespoons flour and 2 Tablespoons taco seasoning. Then add 1 green pepper and 1 red pepper cut into strips, 1 cup frozen corn and 1-1/2 cup thick and chunky salsa. Cover and cook on low 6-8 hours or high 3-4 hours, Top with 1 cup Mexican style shredded cheese. Serve over rice.

Apple Pancake Teddy Soumis (6/30/08)

 Mix together and set aside: 3/4 cup pancake mix or Bisquick, 1/2 cup milk, 3 eggs and 1/3 cup sugar minus 1 Tablespoon. Pinch of salt.

Cut up 1/4-cup butter in bottom of glass dish, and place 2 large tart apples, pared and sliced thin on top. Cover with plastic wrap and microwave 4-5 minutes until butter is melted and apples soft. Sprinkle 1/4-cup pecans on top of apples. Pour 1 cup caramel ice cream topping over apples. Cut up some cream cheese on top (as little or as much as your want) Pour batter mixture over the top. Sprinkle with 1 Tablespoon sugar with some cinnamon. Bake at 350 degrees for 15-20 minutes until firm to touch.

 

Hot Bacon and Spinach  Dave from Bruno’s (6/27/08

Combine 1/2 pound bacon, cooked and crumbled, 1 cup oil, 1/2 cup red wine vinegar, 1teaspon salt, 1 Tablespoon sugar, 1/4 teaspoon white pepper, 1 teaspoon garlic powder. Mix and Sprinkle over bed of spinach and very thinly sliced red onion.

 

The Best Frozen Corn  (6/26/08)

Cut 4 cups corn off cob. Add 3/4 cup water, 1/4 stick butter, 3/4 Tablespoon sugar and 1/2 Tablespoon salt.  Cook ingredients for 5 minutes. Place in freezer containers and cook. Freeze. For bigger batches, double the ingredients for double the corn.

 

Lime Applesauce Salad  (6/24/08)

Heat 1 cup apple sauce until it bubbles. Remove from stove and stir in a 3 oz package lime Jell-O, stir to dissolve. Add 7 oz bottle 7-up and stir until bubbles disappear. Pour into individual dishes or a bowl. Top with frozen topping and even a strawberry on each dish. Can use sugar free items.

 

Microwave Crumb Crust  (6/23/08)

Melt 5 Tablespoons butter or margarine in a 9 inch microwave pie plate. (On high about 1 minute).  Stir in 1 cup crumbs (graham cracker, chocolate wafers, ginger snaps or vanilla wafers) Note: if crumbs are very fine, make it 1 and 1/4 cup crumbs.  Press into the bottom and sides of pie plate. Cook at 70 percent power or roast level for one and one half minute or till set.

 

Refrigerator Pickles (6/20/08)

Mix together 7 cups thinly sliced unpeeled cucumbers, 1 cup sliced onion, 1/3 cup (or more) green pepper and 2 Tablespoons salt. Let stand 1 hour. Drain and wash.  Heat 1-1/2 cup vinegar, 2 cups sugar, 1 teaspoon (or more) celery seed, mustard seed if you wish. Pour over pickles and cool. Cover and refrigerate.

  

Dave’s Rub (Bruno Motors) 6/19/08

Combine: 1 Tablespoon dried parsley, 1 Tablespoon dried onion flakes, 3 teaspoons ground red pepper, 2 teaspoons garlic powder, 2 teaspoons thyme, 2 teaspoons brown sugar, 1-1/2 teaspoons salt, 1 teaspoons nutmeg, 1 teaspoon crushed red pepper, 1 teaspoon allspice, 1/2 teaspoon black pepper, 1/4 teaspoon anise and 1/2 teaspoon cinnamon.  Use as rub on fish, beef or pork. Will keep for several months in covered jar.

 

Chili Dog Casserole (6/18/08)

Preheat oven to 425 degrees: Put 1 can of chili with beans in a 9 by13 pan. Place 1 hot dog in each of 10 tortillas. Place seam side down over the chili in the baking dish. Top with another can (15 oz) chili with beans and sprinkle 8 oz of shredded mild cheddar cheese over the top. Cover and Bake for 30 minutes or till heated through. Can reduce the recipe to 8 by 8 pan with less of each ingredients. Can us turkey dogs or homemade chili.

 

Strawberry Pie (6/17/08)

Line a pie plate with 4 cups sliced strawberries.

Cook 1 box sugar free, fat free vanilla COOK AND SERVE pudding, not instant, according to the box but use water instead of milk.  Add one 3 oz strawberry Jell-O. Cool and pour over strawberries and refrigerate till set. Weight watchers one fourth of the pie is just 1 point!

 

Weight Watchers Cobbler (6/17/08)

(You can cut this in half and use an 8 by 8 pan)

In a 9 by 13 pan place 2 pounds your choice of frozen fruit. Sprinkle with 1 box any band yellow cake mix. Pour 12 oz can diet Sprite or diet 7-up over the top. Cover with foil and bake at 350 degrees for 20 minutes. Uncover and bake an additional 40 minutes. 12 servings 3 points each.

 

Shelley's Crunchy Chicken Casserole (6/16/08)

Sauté 1 cup chopped onion, 1 cup chopped celery in 1 stick butter or oleo until soft. Add 1 cup chicken broth and 6 cups herb-seasoned croutons until moist. Press half of the mixture into bottom of a 9 by 13 inch pan and set aside. Sauté 3-4 boneless chicken breasts in butter and add 1 can cream of chicken soup, 1 can cream of celery soup and 1/2 bag frozen mixed vegetables. Spread chicken mixture over the crouton mixture and top with remaining crouton mixture. Bake at 350 degrees for 50-60 minutes.

 

Orange BBQ Chicken (6/12/08)

Mix together 1/4 cup BBQ sauce, 1/4 teaspoon grated orange peel, 1 Tablespoon orange juice. Grill 2 pounds chicken and after it starts brush with the sauce.  Add 1 small zucchini, cut in half lengthwise and 1 medium red pepper or vegetables of your choice. Continue grilling chicken and vegetables until chicken is cooked through and vegetables are tender, turning occasionally. Brush chicken with BBQ sauce and vegetables with Italian dressing.

 

Frosty Chocolate Pie (6/13/08)

Combine 15 cream filled chocolate sandwich cookies, crushed and 1/4 cup butter or margarine, melted and press into greased 9 inch pie plate (or buy a ready made cookie pie crust.) In a mixing bowl mix together 1 cup cold milk and 1 package instant chocolate pudding mix until it starts to thicken. Fold in 2 cups vanilla ice cream, softened. Spoon into pie crust and freeze. Before serving you can top with ice cream and decorate with chocolate.

 

Strawberry Rhubarb Muffins (6/11/08) - REVISED

Combine 2-3/4 cups flour, 1-1/3 cup packed brown sugar, 2-1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon cinnamon, dash of salt.In a bowl whisk together: 1 egg, 1 cup buttermilk or sour milk, 1/2 cup vegetable oil, 2 teaspoons vanilla. Stir egg mixture into dry ingredients just until moist.  Fold in 1 cup chopped fresh strawberries and 3/4 cup diced fresh or frozen chopped rhubarb. Fill greased or paper lined muffin cups two thirds full. In a small bowl mix till crumbly 1/2 cup chopped nuts, 1/3-cup brown sugar, 1/2-teaspoon cinnamon and 1 Tablespoon cold butter. Sprinkle over the batter. Bake at 400 degrees for 20-25 minutes or till toothpick comes out clan. Cool for 5 minutes before removing from pans to wire racks.

 

Spicy Three Pepper Rub  (6/10/08)

Combine: 2 teaspoons salt, 2 teaspoons oregano, 2 teaspoons paprika, 2 teaspoons thyme, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon black pepper, 1 teaspoon white pepper, 1/2 teaspoon red pepper, Combine and shake before using, makes 1/4 cup.

 

Creamy Lemon Cheesecake  (6/9/08)

Mix together 2/34 cups graham cracker crumbs (about 18 full boards) 1/2 cup butter, melted, and 1/4 cup sugar. Spray a non-stick 8 by 8 baking pan and pat one half of the cracker crumbs into the bottom and press down. Refrigerate 1 hour.

Place 8 oz cream cheese, softened in a bowl and mix with 1/2 cup milk. Add 1-1/2 cups milk and 1 package instant lemon pudding. Mix for 1 or 2 minutes until smooth. Pour pudding mixture over graham crackers. Sprinkle remaining graham crumbs over the top and refrigerate.

 

Turkey Sloppy Joes (6/6/08)

Boneless turkey breast. Cook in crock pot or otherwise until well done and shred with hands. Mix with the turkey, 1 can chicken mushroom soup and 1 can cream of celery soup and 1 can chicken broth.   Sauté 1 onion chopped and one or two celery ribs until done. Add all to crock pot and cook until very hot. Serve on buns.

Cheeseburger Muffins (6/5/08)

Cook 1/2 pound ground beef and 1 small onion, chopped over medium heat until meat is no longer pink. Drain very well.

In a bowl, combine: 2-1/2 cups flour, 1 Tablespoon baking powder, 1 teaspoon salt. In bowl combine 3/4 cup ketchup, 3/4 cup milk, 1/2 cup butter or margarine, melted, 2 eggs and one teaspoon prepared mustard. Stir into dry ingredients just until moistened. Fold in beef mixture and 2 cups shredded cheddar cheese. Fill greased muffin cups 3/4 full. For regular size cups Bake at 425 degrees for 20-25 minutes Makes 2 dozen. For Mini muffin cups, bake at 425 degrees for 15-18 minutes Makes 5 dozen of these. Can be frozen well.

 

Smoked Ham and Cabbage Soup  (6/4/08)

Heat 2 Tablespoons butter in a 6 quart pot. Add 1 cup onion, diced, 1/2 cup celery, diced, 2 cups cabbage shredded, salt and pepper. Stir over low heat until tender, about 7 minutes. Add, 3 medium potatoes, peeled and cut into 1/2 inch cubes, 2 cups smoked ham cubed, 6 cups chicken broth. Bring to a boil and simmer, partially covered for 20 minutes.  In a small bowl combined 2 Tablespoons flour and 1/2 cup sour cream. Slowly add about 1/2 cup of the warm mixture to the sour cream flour mixture and them pour into the soup. Stir well and serve hot.

 

Sweet Potato Bread (6/3/08)

Combine 3 eggs, 1/2 cup vegetable oil, 1/2 cup applesauce, 1 teaspoon vanilla. Mix well, stir in 1 cup mashed sweet potatoes, 2 teaspoons grated orange peel. Mix well. Combine 3 cups flour, 1 cup sugar, 1 cup brown sugar, 1 teaspoon salt, 1 teaspoon baking soda, 1 teaspoon cinnamon, 1 teaspoon nutmeg, and 1/4 teaspoon baking powder. Stir the dry ingredients into the potato mixture and stir until combined and add 1 cup chopped nuts, if desired. Pour into 2 greased 9 by 5 loaf pans. Bake at 350 degrees for 50-60 minutes or until a toothpick inserted near the center comes out clan. Cool for 10 minutes and then remove and cool on racks.

 

Strawberry Rhubarb Crumble (6/2/08)

To make crumble topping, combine 1/2 cup flour, 3/4 cup packed brown sugar, 1/4 teaspoon salt and 3/4 teaspoon cinnamon in a food processor. Pulse to blend. Slice 1/2 cup cold butter and pulse that to form a course meal. Rub into that 1-1/2 cup old fashioned rolled oats.  Combine 1 pound rhubarb, sliced and 3 cups strawberries sliced with 1/3 cup brown sugar in 2 qt. shallow glass  baking dish, Strew  crumble topping evenly over surface and bake at 375 degrees for 30 to 45 minutes or until fruit is bubbly and crumble is brown.
